Mom’s Broccoli Salad

A family favourite in the Hennessey house (and at potlucks!), this broccoli salad is super easy and comes together in about 10 minutes!  See below for the recipe! 
2 cups Broccoli, chopped (we used a bag of “steaming” broccoli)
1 cup Mayonnaise (you could use plain Greek Yogurt or a mixture of the two)
1 cup Shredded cheese
1/4 cup Sugar 
2Tbsp. White vinegar
Handful of Bacon Bits
1/2 cup Chopped Red Onion

** We prefer this to have some extra moisture. If you prefer a dryer salad, reduce the mayo/greek yogurt. 

Chop broccoli, red onion and mix with bacon bits. In a separate bowl, mix together sugar, mayo and vinegar. Pour mixture over veggies and bacon and mix together. Add cheese. Add SECRET INGREDIENT. Mix everything together and refrigerate (overnight if possible).  Enjoy! 

Throw broccoli, red onion, bacon bits into large bowl

Mix mayo (or greek yogurt), sugar, vinegar in separate bowl

Stir wet mixture into veggies 
Add cheese and mix together

Momma Hennessey’s secret ingredient- CRAISINS! If you want a little sweetness add a handful of craisins in to your broccoli salad


What to Cook Wednesday: Salsa Chicken

Happy Wednesday! I’m back with another of my favourite recipes! It’s super easy, delicious and cooks in about 45 minutes! We call this Salsa Chicken. It’s basically a jar of salsa poured over chicken and then baked. But it’s oh. so. good. It’s super easy, and can feed a TON of people relatively cheaply! I tend to use chicken breast (thawed), however I can’t see why thighs or another cut couldn’t work!  It’s so simple I almost don’t even need to write out the recipe! Check below for the  ingredient list and instructions! 

3-4 Boneless, skinless chicken breasts (or a cheaper cut, like thighs or bone in with skin removed)
A jar of salsa in any heat (we use medium for a little kick)
Shredded cheese 
A bell pepper

The instructions are super simple: Preheat oven to 375 degrees. Pound out chicken breast if thick and add to greased cooking dish. Pour jar of salsa over chicken, sprinkle chopped bell peppers and cheese over dish. Bake for 45 minutes or until chicken is cooked through. Enjoy!

After it’s cooked you may have some liquid in the dish- so be careful! Sprinkle with broken tortilla chips and serve with a salad or rice!

Friendly Friday: My Favourite Bloggers

Good Morning & Happy Friday. I’m really excited to share today’s post with you. As you can probably guess, I enjoy reading blogs and picked out a few of my favourite to share with you! All of these ladies are the kind of women I think I would be best friends with if I knew them in real life. These women encompass all that I would like to be/have in the future! Kayley from That’s Your Gold and Lauren from Lauren Elizabeth are not much older than I am, but are young women who have created a business out of a passion and are beyond successful in their chosen careers! Who doesn’t want to work at something they love? Kate from The Small Things Blog and Virginia from LiveLoveDIY are both (new!) moms who are not only being everything to their children, but also doing what they love. All of these bloggers have made their “side hustle” into a full time job and are obviously enjoying it! They produce great content that appeals to so many different readers!

1. Kate from The Small Things Blog

I initially found Kate’s blog a number of years ago- I think I was looking for a hair tutorial. Not only does Kate share hair tutorials, but she also shares her love of skin care, fashion and makeup with her readers. Kate has two sons (who are super cute!) and she often shares musings about life with two- under-two! Kate is also active on YouTube where she shares a number of tutorials, makeup looks and monthly favourite videos! Kate’s instagram page is filled with cute pictures of her kids, her new home and the beauty products she is currently loving- I make sure to keep up-to-date with this too!

2. Lauren from Lauren Elizabeth

The younger sister of Kate (above) also blogs and makes the occasional YouTube video. Lauren’s home decorating skills are beyond what I could ever dream of,  but I love seeing how she takes the cutest trinkets and makes them into something functional in her bedroom/office. Lauren also posts her outfits and writes a lot about her personal style on her blog. She shares some recipes (I’m dying to try this one!), DIYs, and so many other wonderful musings! Lauren also owns her own jewelry store and the pieces are super cute- you can find the link below!

3. Kayley from Sidewalk Ready/ That’s Your Gold

I was initially going to nix this blog from this post, not because I don’t love it, but because late last year, Kayley stopped blogging and moved to a Tumblr page that she curated with her favourite photos, hair styles, music, art and so many other things. However when I went to Sidewalk Ready to find a photo, I discovered that she was once again blogging under this site! It’s safe to say I binged on about 4 months worth of posts! At the beginning, Kayley was a fashion blogger and shared daily outfit inspiration. I pinned a ton of her outfits and go back to them quite often. I am happy to see that she is once again blogging, and invite you to visit her blog. It’s currently still located under the URL Sidewalk Ready, but a post written not long ago states that it will soon be located at (but it will redirect if you continue to use Sidewalk Ready!).

4. Virginia(and Jesse) from LiveLoveDIY

This blog is my favourite Pinterest find to date. Virginia has to be one of the craftiest and creative  DIY bloggers I have seen. What I really love about LiveLoveDIY is that Virginia shows the end result AND all of the mistakes in between. No one is perfect and we all have DIY fails- it’s nice to see someone who makes a living from DIYing share their fails too! Virginia’s home is absolutely gorgeous and she shares the ups and downs of purchasing a fixer upper and really jumping in head first. She writes wonderful posts sharing all of her best tips for decorating on a budget, renovating on a budget and finding the best that Craigslist has to offer. I guarantee that if you own a home or live in an apartment you will find something of value on LiveLoveDIY. Virginia just had her first baby (a girl!) and has taken some time away from her blog, but shares updates on her Instagram page!
